Totally vegan, gluten free, dairy free
4 c corn kernels
1 c cashews
1/2 c agave syrup
1 tbs grated lime zest
1 tbs lime juice
1 1/2 tsp vanilla exract
1 tsp salt
Puree 2 cups of corn,1/2 cup cashews and 1 cup water til smooth. Transfer puree to another bowl, repeat with remaining corn/cashews/water.
Strain puree well, discard solids left in strainer.
Whisk agave/lime juice and zest/vanilla and salt. Mix all ingredients then throw in Ice cream maker following manufacturers directions.
